Salads and Dinners for Dad

20160410_181148I prepare meals for my dad to ensure he eats a variety of foods including fresh foods and vegetables. I always use EasyLunchboxes for his packed foods because the three sections provide the necessary space, the lids are easy to remove, and the boxes stack well in the refrigerator.

In the meal above, he had a roast beef sandwich on a bun, veggies, berries, and homemade macaroni salad.

20160425_174259For the dinner above, my dad had barbeque chicken (packed in a separate container to heat and add to the bun), corn on the cob, broccoli, and a Cutie.

20160419_193125The meal above included Thai Basil Beef with cilantro and rice. I followed the recipe from Half Baked Harvest. I made this for dinner for my family one night. It was quick and easy. It left just the right amount extra to include in this packed meal for my dad. On the side, I packed apple slices, celery, carrot sticks, and a tomato.

20160421_191230These last three meals all include salads. My dad is a big fan of salads so I make versions of these each week for him. Two of these include kiwi and blackberries. One includes jello (something else he enjoys). One includes a leftover garlic knot; he likes how soft these rolls are. The middle one includes apples and peanuts. He likes snaking on peanuts and they are a good source of protein for him.

The EasyLunchboxes I used for my dad’s meals are really versatile. The are great for big salads like pictured above as well as for other meals including dishes that will be microwaved. These boxes stack neatly in my refrigerator and are easy for my dad to transport to his home. EasyLunchboxes are really handy and eliminate the need for three separate containers per meal, which would be a little too complicated for my dad to keep up with.     I love how healthy these lunches look. I use a bento lunchbox for my kids but it is way too bulky. I’m going to have try using a container like yours. It looks cheaper and simpler.
